There is no beauty with a better finish than nature and no resource more valuable than simplicity . here’s definite proof. What Ferrán Adrià was looking for in sphesification and what the Fat Duck team were looking for in a complex dish which included an iPod set into a shell, the sound and taste of the sea, is achieved in El Chiringuito de María by sizzling fresh fish on the grill with no other seasoning than salt and some salad to go with it. The location is enough to make your mind boggle. This beach bar has no official name. Some know it by the owner’s name, María, others refer to it as the Chiringuito de las Sombrillas (the beach bar with the umbrellas) and others simply by the small cape where you’ll find it, Sa Punta, from where, at first glance, you can see what nature has offered the island and the submarine world full of life which is part of the Dels Freus Marine Reserve. If you’ve every sailed, even if only once, and if you go there in the morning, your spirit relaxed, and just sit there, you’ll feel like on a boat, smelling and listening, tasting, touching and looking at the sea. There is no menu but a bartender shouting out the dishes: “Today’s dishes are John dory, Ibiza prawn, cuttlefish, sardines, lamb chops, steak and red mullet just in! For dessert, flaó and café caleta”. Long live places like this.
